Call it breakfast or call it dessert. Either way it’s a summery treat.
Here’s a pretty parfait that’s guilt-free; the tropical sweetness comes packed with nutrition. The yogurt contains calcium, protein and probiotics — and if you make this recipe with low-fat Greek yogurt, you’ll get even more protein than by using regular yogurt.
Pineapple and banana provide vitamin C and summery sweetness.
This is also an easy parfait for children to assemble, so if you’re trying to steer your children toward more healthy treats, set them up with small bowls or parfait glasses, spoons to scoop ingredients with and let them sprinkle the toasted coconut over the top.
Ingredients
1 tablespoon coconut
1/2 cup vanilla yogurt
1/3 cup crushed pineapple
1/2 banana, sliced
Instructions
Toast coconut by placing it in a small, dry skillet, cooking until golden, about 5 minutes. Stir frequently.
Place yogurt in a small bowl and top with the prepared fruit. Garnish with toasted coconut.
