Ingredients
- Marinade
- 1 tablespoon minced garlic
- 1 teaspoon olive oil
- ¼ teaspoon salt
- 2 boneless strip steaks, trimmed
- Corn Salad
- 5 large ears corn, husked
- 2 medium tomatoes, chopped
- 1 small red bell pepper, diced
- 2 teaspoons olive oil
- ¼ teaspoon salt
- 2 tablespoons chopped fresh basil
- 2 tablespoons red wine vinegar
Instructions
- Preheat grill to high.
- Combine garlic, oil and salt in a small bowl. Rub the mixture on both sides of steaks.
- Place the steaks and corn on the grill. Grill steaks to preferred doneness, about 5-6 minutes for medium. Remove steaks from grill and let rest while corn finishes cooking for about 2-3 more minutes.
- Once the corn is cool, remove kernels from the cob. Combine the corn, tomatoes, bell pepper, oil, salt, basil and vinegar in a bowl.
- Slice the steaks and serve with the corn salad.
