Cutting back on meat? Cauliflower steaks will satisfy your summer-grilling craving.

More people are moving toward a plant-focused diet. Not only is it better for the environment, but eating less red meat and more plants is also healthier for our bodies. A plant-based diet has been associated with a reduced risk of developing heart disease, diabetes, some forms of cancer and cognitive decline.

However — it is grilling season and Americans love to grill. So if you are in the mood to do some grilling but you practice a vegetarian lifestyle — or have cut back on eating meat — try these delicious cauliflower steaks. It has a satisfyingly meaty consistency, and the ends get crispy and crunchy, which you are guaranteed to love. It’s also a nutritious powerhouse, loaded with fiber and rich in Vitamin C, B-12 and Folate. If you have leftovers, which is not likely, chop the steaks up and add them to some additional veggies for a quick stir fry the next day.

Cauliflower steaks on the grill

Ingredients

  • ¼ cup canola oil
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • ½ teaspoon salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon brown sugar
  • ½ teaspoon chili powder
  • 2 heads of cauliflower
  • Black pepper

Instructions

  1. Preheat the gas grill to medium heat.
  2. Whisk together the oil, lemon juice, garlic, salt, paprika, brown sugar and chili powder.
  3. With the stem side up on a cutting board, remove the leaves from the bottom of the cauliflower.
  4. Cut the cauliflower vertically to remove the loose florets. These can be used for something else.
  5. Brush the steaks with the oil mixture on one side and place that side down on the hot grill. Grill for 8 minutes. Meanwhile brush the top with the remaining oil mixture, and carefully flip with a large set of tongs or a large metal spatula. Grill the second side for approximately 8 minutes, or until the cauliflower is golden brown and a bit crispy.
  6. Grind fresh black pepper on top before serving.
