Angel food cake is yummy with fruit. Here’s an unusual combination of fruit and cinnamon sugar to dress it up.
Angel food cake is a — pardon the pun — heavenly dessert in hot summer months, because it’s light, not rich and gooey. It also goes well with fresh fruit.
This recipe puts a twist on traditional tomato-based salsa, creating a faux salsa from fruit, lime juice and cinnamon sugar. Experiment with flavors and swap out some of the fruit listed here with other types of fruit that are in season, if you’d prefer (for example, using blueberries or raspberries in place of the strawberries).
Top some angel food with this juicy fruit salsa to enjoy a dessert that’s sweet and summery, but light on fat and calories.
Ingredients
1 cup strawberries, cut into bite-sized pieces
1 cup pineapple, cut into bite sizes
3 kiwis, peeled and diced
2 mangoes, peeled and diced
1 tablespoon lime juice, fresh
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon
1 angel food cake, ready-made or homemade
Instructions
Place all the chopped fruit into a large mixing bowl. In a small bowl, combine the lime juice, sugar and cinnamon.
Pour the lime juice mixture over the chopped fruit. Stir gently so the lime juice mixture coats the fruit evenly. Chill in the refrigerator, if time allows.
Cut the angel food cake into 12 slices. Spoon 2 tablespoons of fruit mixture over slices of angel food cake.
