This easy pumpkin parfait recipe, perfect for Thanksgiving and Christmas, relies on many of the same delicious flavors as heavier pies and cakes. But with nonfat milk, sugar-free pudding mix and a modest serving size, you won’t waddle away from the family table feeling guilty that you over-indulged. These adorable cups are easy to whip together several hours before a family gathering, then chill in the refrigerator.
Ingredients
1 cup pumpkin puree
1 package (1 ounce/28 g) sugar-free instant vanilla pudding mix
2 cups cold nonfat milk
1 teaspoon cinnamon
1 teaspoon allspice
1⁄2 teaspoon vanilla extract
6 tablespoons nonfat whipped cream topping
6 cinnamon sticks
1⁄2 teaspoon ground nutmeg
Instructions
In a medium mixing bowl, combine the pumpkin puree, pudding mix and milk.
Add the cinnamon, allspice and vanilla. Mix thoroughly.
Spoon the mixture evenly into 6 parfait or martini glasses.
Chill in the refrigerator for about 30 minutes, until the mixture sets.
Place 1 tablespoon of whipped cream topping on top of each parfait.
Garnish each one with a cinnamon stick and a sprinkle of nutmeg.
