Fresh salsa and tangy chicken skewers — this chicken kebob recipe is great for parties at home or at a game.

Ingredients
¾ cup chopped, seeded tomato
¼ cup chopped avocado
2 tablespoons lime juice
1 tablespoon green onion, chopped
1 tablespoon cilantro, chopped
1 teaspoon chopped jalapeno
¼ teaspoon minced garlic
¾ pound skinless, boneless chicken breast halves, cut into 1 inch pieces
2 tablespoon lime juice
2 teaspoon low-sodium soy sauce
1 teaspoon minced garlic
Lime wedges for garnish, optional.
Instructions
Combine first 7 ingredients. Cover and chill. Put the chicken in a shallow dish. Combine the second 2 tablespoons of lime juice with the soy sauce and garlic. Pour the mixture over the chicken. Cover and refrigerate for 1 hour. Remove the chicken from marinade, saving the liquid. Put marinade in a small saucepan and bring to a boil. Remove from heat.

Thread chicken onto 2 skewers. Grill skewers on a grill rack coated with cooking spray. Grill for 6-8 minutes, turning occasionally and basting with the reserved marinade. Spoon salsa onto a plate and place kebobs on top of the salsa or serve the salsa on the side in a small bowl or cup. Serve with a lime wedge as garnish, if desired.
